crockpot cooking for moms saves time and dishes! Here is a simple meal that is nutritious and delicious!
you will need
1 pound pack of frozen vegetables
2 sweet potatoes
1/4 c. coconut oil
if you are chicken is not defrosted (what mom remembers to pull it out of the freezer?! ) begin by defrosting the chicken. You can do this in the microwave, I prefer to do a cool water bath. Remove the chicken from packaging, place in a large bowl, fill with cool water and keep a small stream of water going into the bowl. You want to keep the water circulating.
while your chicken is defrosting, prepare your other ingredients.
-spray or butter the sides of your crockpot.
- dice your sweet potatoes.
-empty half of your bag of frozen vegetables into the crockpot and place half of your diced sweet potatoes on top, season with salt and pepper.
- Repeat second layer with the remainder of your vegetables and then sweet potato, and season and again.
lastly, add the chicken top the top and the coconut oil on top the chicken. I keep my audio in the fridge for freshness, so in the image you are seeing the white tablespoon chunks. You want to add a 4th/half cup of oil.
Cook on high for 3–4 hours or low for eight hours and 6-8 hours on low.
